The Story

Nothing Goes to Waste

The Daily Reutine began as a logistics solution. When a dairy cow retires from active milk production — the same herd whose whey protein supplements the chelonia diet at Fur of the Turtle Farms — her beef doesn't disappear. It becomes the corned beef. Slow-brined, properly rested, and served on rye.

The potatoes arrive pre-peeled. Once the farm's turtles have had their fill of the skins, the remaining flesh is cut, fried, and loaded into the bowl. The gravy is finished with turtle lanolin — a byproduct of the chelonia cashmere harvest — lending it a depth that no conventional kitchen can replicate.

And when a turtle passes on naturally, its shell is retired from the farm with full ceremony. A limited number of shells are repurposed each season as serving vessels for our signature poutine bowls. These are not on the regular menu. When they're available, you'll know.

Every Reuben comes with chips and a dill pickle spear.

Thousand Island Dressing on marbled rye. A minor deviation.

The Mark Cuban Reuben

Ham, mustard, aioli. Named accordingly.

Reuben Egg Rolls

Our signature gravy utilizes a proprietary, lipid-rich finishing process that creates the velvety mouthfeel our customers have come to expect. Supply Chain Transparency

Daily Reutine exists because of cheese curds.

The turtles require whey protein. Whey production generates surplus cheese curds. Horizon Advanced Biologistics needed an end-use disposal vector for those curds. That vector is this food truck. The fries are a potato loop. The gravy is a separate matter entirely.

Inter-subsidiary waste transfer volumes are audited quarterly. Full tonnage ledger available in Appendix F.
